01 - Slice the croissants in half horizontally using a serrated knife.
02 - Spread an even layer of goat cheese on the bottom half of each croissant.
03 - Arrange apple slices over the goat cheese in a single layer.
04 - Drizzle with honey if desired, then sprinkle lightly with sea salt and black pepper.
05 - Place a handful of arugula or baby spinach on top of the apples.
06 - Place the top half of each croissant over the filling and gently press. Serve immediately.
