06 - Taste and adjust seasoning if needed. Serve hot, topped with crispy tortilla strips and your choice of additional toppings.

# Expert Suggestions:

01 -
  • It comes together in under an hour but tastes like it simmered all day
  • The crispy tortilla strips on top make every spoonful feel like a special occasion
  • Leftovers actually taste better the next day, if you can manage to save any
02 -
  • The tortilla strips will lose their crunch if you store them with the soup, so keep them in a separate container on the counter
  • This soup thickens up considerably in the fridge, so add a splash of broth when reheating leftovers
  • The enchilada sauce brand really matters here, taste it before adding and adjust your seasonings accordingly
03 -
  • A splash of lime juice right before serving brightens everything and cuts through the richness
  • Warm your bowls in the oven for a few minutes, the soup stays hot much longer
