01 - In a medium bowl or large mason jar, combine oats, milk, yogurt, chia seeds, maple syrup, and vanilla extract. Mix thoroughly until all ingredients are well incorporated.
02 - Stir in the grated carrot, ground cinnamon, nutmeg, ginger, and salt. Continue mixing until the spices and carrot are evenly distributed throughout the oat mixture.
03 - Cover the bowl or jar securely and place in the refrigerator. Let the oats soak for at least 8 hours or overnight to allow the flavors to meld and the mixture to thicken.
04 - In the morning, remove from refrigeration and give the oats a thorough stir. If the mixture appears too thick, add a small splash of milk to reach your desired consistency.
05 - Divide the overnight oats evenly between two bowls or jars. Top with chopped walnuts or pecans, raisins, and shredded coconut as desired. Serve chilled and enjoy immediately.
