Golden tofu cubes with savory dipping sauce.

# What You Need:

→ Tofu Bites

01 - 14 oz firm tofu, pressed and cut into 1-inch cubes
02 - 2 tbsp cornstarch
03 - 1/2 tsp garlic powder
04 - 1/2 tsp smoked paprika
05 - 1/2 tsp salt
06 - 1/4 tsp black pepper
07 - 3 tbsp vegetable oil

→ Dipping Sauce

08 - 3 tbsp soy sauce
09 - 2 tbsp rice vinegar
10 - 1 tbsp maple syrup
11 - 1 tsp toasted sesame oil
12 - 1 clove garlic, minced
13 - 1 tsp fresh ginger, grated
14 - 1 tsp chili flakes
15 - 1 tbsp scallions, finely chopped

# Directions:

01 - Press the tofu firmly with paper towels to remove excess moisture, then cut into 1-inch cubes.
02 - In a bowl, whisk together the cornstarch, garlic powder, smoked paprika, salt, and black pepper. Add the tofu cubes and toss until evenly coated.
03 - Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the tofu in a single layer and fry for 2–3 minutes per side, turning until golden and crispy on all sides. Drain on paper towels.
04 - In a small bowl, whisk together the soy sauce, rice vinegar, maple syrup, toasted sesame oil, minced garlic, grated ginger, chili flakes, and chopped scallions.
05 - Arrange the crispy tofu bites on a platter and serve immediately alongside the dipping sauce.

# Expert Suggestions:

01 -
  • These taste nothing like sad, soft tofu—they're genuinely crispy and satisfying, like the best part of a stir-fry concentrated into one bite.
  • The dipping sauce comes together in under five minutes and tastes like it took way more effort than it did.
  • You can make them ahead, reheat them in a hot oven, and they bounce back to crispy almost instantly.
02 -
  • The tofu must be completely dry—any moisture clinging to it will sabotage your crispness, so don't skip the pressing step even though it feels tedious.
  • Medium-high heat is the sweet spot; too low and they'll absorb oil and turn greasy, too high and they'll brown before the inside stays tender.
03 -
  • Make the dipping sauce the night before and let the flavors marry in the fridge—it tastes even better the next day when everything has had time to get to know each other.
  • If you accidentally oversalt the sauce, a squeeze of fresh lime juice or a splash of rice vinegar brings it back into balance faster than you'd expect.
