01 - Combine cottage cheese, protein powder, lemon zest, lemon juice, honey, vanilla extract, and salt in a food processor. Blend until completely smooth and creamy.
02 - Add rolled oats to the processor and pulse briefly until well combined and mixture begins to hold together.
03 - Transfer mixture to a mixing bowl. Gently fold in blueberries using a spatula, taking care not to crush the fruit.
04 - Refrigerate the mixture for 10 minutes to firm up for easier rolling.
05 - With slightly damp hands, roll mixture into 16 evenly-sized balls, approximately 1 tablespoon each.
06 - If desired, roll each bite in shredded coconut until evenly coated.
07 - Keep in an airtight container in the refrigerator for up to 4 days, or freeze for up to 1 month.
