# What You Need:

# Directions:

01 - Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
02 - Cut the potatoes into ¼-inch thick strips. Pat them dry thoroughly with a clean kitchen towel to remove excess moisture.
03 - In a large bowl, toss the potatoes with olive oil, salt, pepper, smoked paprika if using, and half of the fresh herbs until evenly coated.
04 - Spread the fries in a single layer on the prepared baking sheet, ensuring they don't overlap for optimal crisping.
05 - Roast for 25 minutes until the edges begin to brown.
06 - Remove from oven, flip the fries carefully with a spatula, and sprinkle the minced garlic evenly over the surface.
07 - Return to oven and roast for another 10 minutes, or until golden brown and crispy at the edges.
